MAKING PEANUT BUTTER

I worked at Woodward’s until the 100-year-old machine that made their peanut butter was retired, along with Clyde Turner who operated it. I made the peanut butter too. The recipe was simple. Chinese, not Texan, peanuts were used (for price and quality—we are talking 1977 here). They were roasted in a coffee roaster. Clyde roasted them darker to get more flavour than the other “natural” competitor, Sunny Jim. They were cooled by fan and then blanched—from there straight to a grinder where a primitive sifter shook salt into the hopper. The peanut butter came out a big spout and was bottled or canned by hand. That was the recipe: peanuts, salt.

Unless it was unsalted. Which no one bought, but we made anyway.

I made a short film about it that launched my film career. It was financed by my grocery stocking and peanut butter making career. The end.
